Partners Brian Duncan and Dan Sachs have created one of chicago’s premier restaurants: BIN 36. A restaurant wine bar and market featuring contemporary American cuisine with an emphasis on seasonal ingredients and wine pairing. In the evenings, diners can enjoy either the more casual Tavern dining room or the intimate Cellar. Executive Chef John Caputo creates a 50-selection cheese menu as well as a prix fixe Chef’s Tasting menu with wine pairings that changes daily.
Duncan and Sachs’ vision of the quintessential wine and dining experience became a reality with BIN 36; here novice and wine geek alike can embrace food and wine from the earth to the table.

BIN 36 Wine Director Brian Duncan and Hahn Estates’ winemaker Adam La Zarre have many things in common—their passion for wine, their friendship and a philosophy
that great wines can be approachable, affordable and…fun. This led to a four-year collaboration resulting in the release of the BIN 36 wines. These are not your typical restaurant private-label wines, but a purposeful wine brand, masterfully blended and crafted at a Monterey estate winery, utilizing fruit specifically chosen with BIN 36 wines in mind. “It’s about finding the best fruit and making the best wines for our
guests,” says Brian Duncan, who takes an active role in choosing the vineyards, barrel selection and participating in the final blend. “I wanted to partner with winemakers
that I know personally and whose commitment to quality I was already familiar with. I’m interested in creating wines that both accompany food and drink beautifully on their own.”
